Homemade Succulent Bacon and Jerky

Ingredients:

  • 1 lb pork belly
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup maple syrup
  • 1 tbsp smoked paprika
  • 1 tbsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp pink curing salt (optional, for bacon)

Instructions:

  1. Prepare Bacon:

    • Slice pork belly into 1/4 inch strips.
    • In a bowl, mix soy sauce, brown sugar, maple syrup, smoked paprika, black pepper, garlic powder, and onion powder.
    • Marinate pork belly strips in the mixture for 24 hours in the refrigerator, turning occasionally.
    • Preheat your Grillz BBQ Grill in smoker mode (lid on) to 200°F (93°C).
    • Place bacon strips on the grill’s cooking grill plate and smoke for 2-3 hours until crispy and cooked through.
  2. Prepare Jerky:

    • Slice pork belly into thin strips against the grain.
    • Marinate with the same mixture as bacon but omit the curing salt.
    • Preheat Grillz BBQ Grill in smoker mode to 160°F (71°C).
    • Arrange strips on the grill and smoke for 4-6 hours until dried and chewy.
