Ingredients:

  • 1 zucchini, sliced
  • 1 red bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 8 cherry tomatoes
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 200°C.
  2. Thread vegetables onto skewers.
  3. Brush with olive oil and season with oregano, salt, and pepper.
  4. Place skewers on the high rack.
  5. Grill for 10-12 minutes, turning halfway through.
